Chamisal Pinot Noir | Central Coast, California
Red cherry, plum & blackberry dominate the fresh flavors along with a with a note of earthiness. Partial carbonic maceration fermentation (under a blanket of gas away from oxygen) yields a vibrant fruity character and high aromatics to this popular Pinot Noir. Low tannins. Good acidity lifts the finish and makes this an excellent food wine. Shrimp Pad Thai is a good match. Try with spicy burritos. Lighter meat dishes. Charcuteries. Mushrooms. Duck & fig combinations.
